Probably because in real life the results wouldn't be that great. I mean hasn't Posford been in tons of project yet none come even close to his own.

 

To have a chance on working I think the artists would need to have similar style so they would complement each other, not contradict.

Simon Posford vs. Björk would (could) indeed sound very interesting and beautifull. And much more special than combine great psy vs. great psy.
