sure they do

 

often there are 2 different melodies played together to create a nice harmony. For example first the main melody starts and later they add another layer with a different melody to it.

 

also if they use a delay on a melody you could say it's canon depending on how they set the delay.

hi...

is there some sort of a technique to create counter melodies or is it just done by ear??

for example- overlapping notes of two different melodies create chords that are dissonant or dont sound pleasing... even though the timbre of each instrument is very different...

when you use the same scale in the same key for the two melodies that are played together you're fine. It doesn't mean that any combination of melodies within the same scale and key will sound good though, but its not going to be dissonant.
